We also have gas grills at our pool. We often bring burgers (beef, salmon, veggie, or chicken) or sausages or marinated meats. Cook them up at the pool. Also bring big veggie strips soaked in balsamic vinegar and salt for the grill.
For marinated meats, we find it works to bring home big packs of meat from costco (like the organic chix thighs) and open up the packs and mix with marinade in zip locks and then freeze them that way.
Other ideas: beans, quinoa salad, hummus, chips and dip, and pasta salad.
Also, fruit and home-made popsicles (we put them in the freezer when we arrive)
