I got this recipe from this site and this is truly AMAZING. The only changes I made:

-cut the olive oil in half
-added cajun shrimp

-did not add the pomegrante
-cut the garlic in half
-no corn
-Added a full can of black beans

My DH is a meat and potatoes kind of guy and he actually now has requested this twice and has taken the initiative to make it himself.

This recipe is a regular in my house. It is super easy to make with ingredients on hand (I always make sure I have quinoa, black beans, and corn in my house):

I only use one can of black beans as two is too much. Also, I recommend doubling the batch as this makes about three servings, so you won't get a lot of leftovers (and you'll want lefotevers of this). Plus, you can always freeze any extras for a super and quick meal later on in the month.

I put lime on the Quinoa then mix it with lowfat sour cream, spinach and fresh salsa - I love it. Sometime I also mix in fresh fish.
