I sympathize, OP! How about making a list of things your kids eat. For my kid it would be:
Veggies: broccoli, peas, corn, asparagus
Starch: rice, pasta, bread
Protein: any meat, eggs
Then you are looking at throwing together a combo of one each of those three things for dinner each night. Kids generally like simple, so you don't have to worry about being all fabulous.
Night 1 - pasta with chicken and broccoli (saute the chicken and broccoli with garlic and olive oil. Toss onto pasta with parmesean. Done.)
Night 2 - Stir fry with whatever meat and veg you have handy over rice
Night 3 - omelletes with leftover chicken and broccoli inside, or asparagus and cheese
Night 4 - chicken or pork sandwiches with salad
Night 5 - take out pizza.
