My mom used to make a delicious casserole by layering lamb pieces w/ Orzo. Tomato sauce was lightly mixed in w/ the Orzo.

Slice and make a couscous salad with crumbled feta, chickpeas, black olives, red pepper, spinach and grilled eggplant (or whatever similar veg you have on hand). Delicious.
