Any of the PP recipes are great. I usually just brush with EVOO and bake skin side down for 15-20 mins.
Serve with a sauce of sour cream, dijon mustard and tarragon -- as much dijon as you like. Yum!

Season fillets with salt/pepper. Mix panko bread crumbs with a bit of olive oil (infused with flavors like garlic, basil is even better), and press the moist bread crumb mixture onto the salmon fillets. bake in 400 degree oven for about 12 minutes.

Pre heat oven to 400. Use an oven safe dish or pan with a lid. cover bottom of dish or pan with 1/4" of white wine, place fillet in skin side down, sprinkle with dill, pepper and a little salt, cover, place in oven for 20 minutes.

This is my weekenight go-to salmon recipe. If you don't have rice vinegar or sesame oil you can just leave them out (or maybe substitute regular vinegar if you want it to taste a bit tangy).
Salmon with Soy Honey Glaze
2 salmon filets
2 teaspoons oil
salt and pepper
1/4 cup soy sauce
1/4 cup honey
2 tablespoons lemon juice
1 tablespoon rice vinegar
1 teaspoon ginger powder
1 teaspoon garlic powder
1/4 teaspoon sesame oil
1. Put fish in baking dish lined with foil, sprinkle with salt & pepper, and rub in oil
2. Mix remaining ingredients in bowl, pour over fish
3. Bake at 450 (preheated oven) for 15 to 18 minutes until fish flakes easily with a fork

I'm not very experienced with fish although I can grill salmon. I have some nice filets but the grill isn't working and neither is my broiler. What's the best way to bake them?
