I like to keep the sides simple and "spring"-ish so we always have asparagus splashed with balsamic and roasted new potatoes, and a greens salad with some citrus in it (and of course matzoh ball soup as a starter). If I have enough time the week before I'll make passover "rolls" and serve those with dinner. I find at Passover since a good chunk of time is taken up with the actual seder, we don't linger over the only dinner portion as long as we might normally. For dessert, flourless chocolate torte and matzoh crunch (the brown sugar/butter/choco chip recipe posted by someone above) if kids will be present!
Agree, I love salmon at Pesach. You can do a very simple sauce with lemon and olive oil, or something like yogurt and dill. We also do roasted new potatoes. And I think this year for the first time I will make a fennel salad -- basically thinly sliced fennel and radishes or endive with walnuts and a lemon/olive oil dressing.
