Agree, I love salmon at Pesach. You can do a very simple sauce with lemon and olive oil, or something like yogurt and dill. We also do roasted new potatoes. And I think this year for the first time I will make a fennel salad -- basically thinly sliced fennel and radishes or endive with walnuts and a lemon/olive oil dressing.

there's that Easiest Chocolate Cake Evah recipe on allrecipes.com I think...vegan and kosher for passover and only like 5 ingredients

Other passover options:
We usually have one poultry, one brisket, and one additional meat dish (one of the two lamb ideas below the last few years) plus a whole heard of veggies and potatoes.
I've made lamb meatballs in a tomato sauce that were a huge hit.
Chicken rolls with spinach matzoh stuffing (take chicken breasts, cut in half to make thin breasts, pound flat, then add stuffing and roll, put in baking tray and bake.
My hostess often makes duck a l'orange with duck quarters that she gets at Costco. Make an orange glaze, roast/broil the duck quarters with a little glaze and then serve with more glaze on the side.
We've had lamb curry the last couple of years (instead of the lamb meatballs)
It wouldn't be Seder for us without a beef brisket
As a different twist, I like white potato tsimmes (as opposed to the more traditional sweet potatoes).
As the PP stated Kugels are always popular.

That's funny...I saw the title and immediately thought "Matzoh Brittle" which is what we call the Caramel/Chocolate Matzoh. I go to my best friend's parents home (in NY) for Passover and one of us traveling from out of town always gets assigned the Matzoh Brittle.

Carmel Matzoh poster here. You could make a potato kugel, which is always a favorite, or any type of roasted potatoes. Veggies are all KforP. I always make a big pot of Matzoh Ball soup. You also might want to look up Sephardic Passover recipes. I've had some really good side dishes made with nuts, pomegranet, apricots, dates, figs and other ingredients. Sephardim use beans so if you might want to skip those recipes. I have a couple of modern Jewish cookbooks. Let me see if I can find anything interesting. I'll come back later today after I've been able to take a look.

any other simple passover recipes? am doing my first seder.....am thinking of a roast chicken with vegetables (as I am competent at that) otherwise, am clueless as to what to make....and can't ask my mom since she is doing the other night.

Caramel Matzo

1 c butter
1 c brown sugar
matzoh
chocolate chips 1 pkg.

On a rimmed baking sheet lined with parchment paper or a Silpat place boards of matzoh. Break larger boards to fit until entire sheet is covered with no space in between boards/pieces.

Melt butter and brown sugar together and bring to a boil. Boil for a minute. Pour butter/sugar over matzoh and spread it evenly so that all of the matzo is covered. Place the baking sheet in a 400 degree oven for 5 minutes.

Take baking sheet out of oven, drop chocolate chips onto the butter/sugar covered matzoh. Let the chips get soft then spread with a butter knife or offset spatula so that the chocolate is spread evenly. Let cool slightly then place in the fridge or freezer to cool and set completely. Once hardened, break apart like peanut brittle or toffee.

Personally, I think this is the only way matzoh is edible. I hate the stuff. (Yes, I am Jewish)

I make all of the desserts for my synagogue's community seder. I also make a cheesecake with almond crust, homade macaroons, and chocolate mousse cake. All but the macaroons are dairy. I can post the macaroon recipe if you like. Homemade macaroon are so much better than any you find in a can.

Similar to the thread on Easter desserts, I have to transport a Passover dessert for about 1.5 hours in the car. Nothing refrigerated, nothing too complicated. Any suggestions? Someone else is already bringing macaroons. Thanks!
