I'd skip the sausage cups. For meat eaters you could just put out some slices of prosciutto or similar cured meats which will be much quicker and, IMO, more appetizing.

You could also get some pre-cut mixed fruit, and another dip such as yogurt-cucumber.

Spinach artichoke dip (make the night before and bake when you get home). Works with the veggies and you could just slice a baguette. I agree with previous posters on drinks. Sparking water is always nice to have on hand.

OP, make up a jalapeno popper dip. So easy and you can prepare it in the morning and just pop it in the oven to heat up when you get home. Mix a block of cream cheese with about 1/2 cup mayonnaise, a can of chopped green chiles, and 2-3 seeded and chopped jalapenos. (I like more, but you want to be mindful of the ones who like things less spicy so that's a good neutral heat level.) Put this in a small baking dish and when you get home and want to warm it through, pour panko bread crumbs and parmesan cheese on top of this and pop it into the oven for about 20-25 minutes at 300 to heat it through. It's good with tortilla chips or Club crackers. Warm, delicious, no meat. Always a hit.

Or you can go really, REALLY easy and melt a block Velveeta with two cans of Rotel on the stove until it's smooth serve that with tortilla chips. Also delicious.

How about pre making something like veggie lasagna, stuffed shells or another dish that all you have to do is throw in the oven. You can pre make a salad and have some bread.

Sounds like you have a nice spread.

Trader Joes have a lot of prepared appetizers in the frozen section if you wanted to round it out. I like those phyllo dough filled with spinach and it would be nice to have a non-meat option. I would also include a bottle of red just in case some people don't drink white and a bottle of that fizzy lemonade in the pretty glass bottle.

I'm hosting a book club at 6:30 pm on a weeknight. I won't get home from work until 5:30 so whatever I serve has to involve either very little prep or prep that can be done beforehand. There will be 6 women and I believe that 3 don't eat meat. I was thinking:

-Crudites
-Hummus
-Crackers
-Brownies/cookies
-Sausage cups (At first I was reluctant bc of the sausage, but they are super fast to stick in the oven from frozen so I figured I would put some out anyway for the meat eaters)

I feel like I need at least one more "hot" something that doesn't have meat. Thoughts? Should I skip the sausage cups all together?

Do you think it's ok to serve white wine and bottled water only for beverages or do I need more of a variety?
