Here's the Cook's Illustrated recipe that we use. You can just leave out the garlic. Feel free to experiment and add other seasonings for variety. It's super easy, just throw everything into the food processor. We haven't had an issue with Tahini spoiling. Just like other natural nut butters, it needs to be kept in the fridge once you open it.

Tahini spoils quickly, so if you buy it, use it up quick.

Tahini isn't necessary. Yes, it changes the flavor without it, but some people can't have tahini (sesame allergy) or just don't want all that fat.

OP here. Thanks! I think I will have to try to make it myself. I was at the store today trying to find any hummus with garlic as one of the last ingredients and I had no luck. Can you share a favorite recipe?

OP, I agree with the PP. Hummus is pretty simple to make and you do not have to worry about coming out differently every time you make it. It's like PBJ sandwich, why buy it when you can make it at home?

We puree a can of chick peas+olive oil+lemon+garlic. Pass the veggie sticks.

The thing with making your own, though, is that you have total control. Tweak the recipe for your taste, and it *will* come out good. I started with a recipe a friend gave me, and when I wanted it to be more creamy I upped the olive oil. I like more lemon and tahini than other people, but you could adjust to your taste.

I agree that some types of recipes come out differently each time, and you never know the final product till the dish is done. (Curry, for example). But hummus is pretty consistent.

If you really want to buy hummus, just note that ingredients are listed in order of amount. So get the hummus for which garlic features farther down on the list of ingredients.

I really enjoy hummus but can't have garlic. It just doesn't agree with me. I'd been able to buy some hummus at Trader Joe's that didn't seem garlicky, but I was wondering are there any grocery store brands that aren't very garlicky? I know basically all hummus brands and flavors include garlic, I'm just trying to find one that you can't really taste the garlic. Please help! And PS I know I can make my own hummus but am not really interested because I don't think it will come out good. Thanks in advance.
