This is definitely not vegetarian, but if you do bacon, you'll probably do sausage, so could do it. http://en.wikipedia.org/wiki/Bacon_Explosion

It's decadently good. I had a friend make this for a barbeque a couple of years ago and yes, we all had 6 months worth of fat and cholesterol in one day, but it was amazing.

Funny I also had the reaction that if she doesn't eat "red" meat, what was she doing eating bacon. I had forgotten the "other white meat" ad campaign until mentioned above.

Anyway, not an entree, but cook the bacon, take refrigerator croissants and put a little butter/shortening on the inside, sprinkle a dash of salt and crumble the bacon and a little chopped scallion in, then roll. Cook per the instructions on the croissant wrapper. I usually make this with smoked Virginia ham, but bacon works too. They're so good and popular. They always go quickly at parties.

Someone mentioned baked potatoes. Bacon and shredded cheese is also good in twice baked potatoes or potato skins and potato soup...basically potatoes and bacon are classic. You can also make home fries with bacon.

Fried rice made with bacon is also good (rice, peas, scallions, egg, bacon and seasoned to taste).

Anyway, OP, just fry it all up. It will be fine another week or so after you cook it. You can put it on salads, or make a quiche.

Accordring to the United States Department of Agriculture (USDA) pork is a red meat. All livestock (Pork, Beef, Veal, and Lamb) are considered as red meat. This name comes from the ammount of myoglobin (a protein which retains oxygen) in the cells of the meat. While pork does turn whiter as you cook it longer, it is always red/pink when it is raw."

fry a few pieces in a pan, remove, saute 1/2 an onion and garlic in the drippings. add a jar of good tomato sauce and heavy cream (i eyeball it), chop up the bacon and add it back in. mix with your favorite pasta.. YUM!!

DH bought a huge package on sale & i'm out of ideas. I'ts been in the fridge long enough that I dont' want to freeze it at this point (shoudl have when it came home, duoh!) Dinner suggestions? SO far we've had:

- Bacon wrapped turkey meatloaf
- Spaghetti Carbanora
- Breakfast for dinner (eggs & bacon)


What else shoudl I make? (we don't eat red meat).
