I will pass along a tip I do all the time. I program my oven (using delay start) to preheat. For recipes like this (or any recipe you pre-assemble and stuff into your fridge), it really accelerates things for oven to be ready to go...

Take chicken out of the fridge first--it will cook faster if it's not quite so cold.

Heat 2 tablespoons butter and 2 tablespoons olive oil in a large skillet on medium-high heat until hot.

Take boneless, skinless chicken thighs or chicken breast tenders, salt and pepper the chicken, put Italian-style bread crumbs on a plate, press the chicken into the bread crumbs on both sides (if using thighs, spread them flat). After you bread each one, put it into the skillet. Flip after about 4 minutes, and then cook until all are done. Serve with lemon wedges. Total time from getting out ingredients, etc. is about 20 minutes.

Also, boneless, skinless chicken thighs will bake through in about 25 minutes (375 degrees). Cover with foil to keep moist. Try brushing them with a mix of honey (1/4 cup??) and mustard (2 Tablespoons??) to taste before putting them in the oven.


Store-bought pizza crust with your choice of toppings. Regular spaghetti sauce or pesto works well for the sauce, add shredded motzerella. They only take 10 minutes to bake, and it's pretty quick to chop a few things up for toppings. If you have fresh basil on hand, wait until it comes out of the oven to put it on. I like pear, gorgonzola, and red onion for something different.

Pasta with broccoli, olive oil, and garlic. (You're supposed to saute fresh broccoli in olive oil and garlic, but I use frozen and just toss it in with the pasta for the last 5 min.)

i actually felt it's a pretty appropriate typo.

i like the cookbook by Cook's on 30 minute recipes. Some of the recipes are not 30 minutes the first time you do them, but they are quick and there are various tips they give that help you get the time down.

i actually felt it's a pretty appropriate typo.

i like the cookbook by Cook's on 30 minute recipes. Some of the recipes are not 30 minutes the first time you do them, but they are quick and there are various tips they give that help you get the time down.

Taco Salad or grilled chicken salad
quesadillas
+1 for stir fry
+1 for pizzas, using english muffins as the crust

I like to cook a whole chicken in the crock pot at the begining of the week (sometimes a pork roast) and then use it throughout the week.
