PP here. Another thing that has been very worthwhile in the PC is beets. The cook really fast and come out great.

For me, just cooking beans in large batches (and freezing in ziploc bags) is useful enough to justify this purchase. However, I sometimes use it to cook artichokes, and I have made a few good batches of risotto, too.

try looking for Moroccan recipes. in country, they use the pressure cookers now in lieu of traditional slow cook methods.

I use my pressure cooker for everything from breakfast (3 minute steel cut oats) to dessert (winter fruit compote and more) and everything in between.

I am a pressure cooking expert, teacher and enthusiast - so much so that I have written a book about it, The New Fast Food: The Veggie Queen Pressure Cooks Whole Food Meals in Less than 30 Minutes.

My first pressure cooking experience more than 15 years ago was making lentil soup for my son which resulted in Shane's Fabulous Lentil Soup. I just never stopped.

I also just made a stew in it yesterday
My cooker is old, so do not use it often
But potatoes come out so good.

Yes, mostly lentils for us, although I can see how I could do beans in a similar way. I have also cooked vegetables in it. I haven't used it as much as I thought I would, though. It would be nice to remedy that.

I love the pressure cooker, but mostly only use it for cooking beans. For example, I had pressure cooked a pot of plain pinto beans the other day, and last night, DH sauteed onion, garlic and spices for re-fried beans. A couple weeks ago, I had made a big pot of plain cooked chick peas and had them on hand for making hummus and curried chick peas.

I got to thinking more about the pressure cooker reading the thread about slow cookers. The pressure cooker is sort of the opposite (slow cooking vs. quick cooking), but is similar in that it adds a certain convenience when trying to get dinner on the table in a short time.

Do you have one? What do you make in it?
