I love the limo at La Granja De Oro, Cuzco, and Machu Picchu, but all of the recipes online just don't sound right. The first problem I see is that none of the recipes call for the meat to be marinated. There is NO WAY those restaurants don't first marinade because they use tougher cuts of meat that turn out tender and the flavor of the meal is infused int he beef, this all leads me to believe that the restaurants marinade their meat.

Do you have a tried, but true recipe?

Also, do you have ANY idea what the rotisserie places (like Edy's in Skyline) uses on their chickens??? That is so addictive!
