Dairy products often separate when frozen and do not necessarily thaw and mix well. That's the type of thing that I would take in to the office, put in the break room just before lunchtime with some paper bowls and a sign saying "help yourself to baked potato soup, microwave for X min to heat." and then come in after lunch and clean my container and put it in my office to take home. The buzzards in my office don't leave much edible left during lunch hours...especially anything edible AND FREE.

Probably not the best alternative, but if you're going to throw out what you can't eat then you could always try it and sees what happens.

It came out well, it was very good but I am not going to be able to eat it all. Usually I freeze leftover soup but not dairy soups. This soup has skim milk, about half cup of sour cream, and half cup of shredded cheese. Do you think it will freeze okay or is it not worth the trouble? Thanks in advance!!
