So how do you cook a loin and still keep it moist? Any other suggestions?

Slow cooker pulled pork.
Quarter two onions and put them in the bottom.
Rub with Salt, Pepper, Onion Powder, Garlic Powder.
Put in slow cooker with one can of chicken broth and one of water.

Cook long time.

Pull with two forks.

Add favorite bbq sauce.

Probably like 20 minutes per pound, but use a meat thermometer and when the internal temp is 165 it's done.

No you don't. It's a pork loin, not a tenderloin. Rub it with garlic and rosemary, and roast it. If you want to get crazy, put some potato wedges under the rack and turn the periodically. Yum

Yeah, that sounds almost impossible. Must be two. Even a 3 lb-er is pretty big, I'm betting it's just a pork loin, not a tenderloin.
