i do rice, a can of corn, a can of tomatos and add in crumbled bacon. everyone always loves it and its the easiest damn thing and tastes great.

Thanks so much for the ideas. I will absolutely do a mexican salad and I think I will try that rice seasoning too, if not for the party, just at home.

If you want to make Spanish rice, look for "Sazon Goya coriander and annato" seasoning in the Hispanic foods section (little orange box). Not sure what it is, but it makes the rice taste delicious!

How bout a corn/avocado/black bean salad? Here's one variation but if you google you'll find lots of others

You could also serve a fruit salad with more tropical/brighter fruits (ie: mango, kiwi, pineapple, etc.)

Any easy make ahead dishes to compliment a chicken enchilada dish that I can do? We are having about 10 guests over - VERY low key couples - think beer not wine - so nothing fancy required. My dish is based on chicken, refried beans, green chilis - I can make ahead and it is an easy one dish meal. I am looking for other type main dishes and/or some sides to go along with it? (I do not have a crockpot.) Thanks for any suggestions!
