Thanks everyone! OP here - how do I defrost them? Do I need to put them in the fridge overnight or just put them in the countertop? And how long does it take to defrost? If I have a party Sunday morning, should I take them out of the freezer on Saturday night or Sunday early morning (6am or so)?

What is the difference between frosting and icing?

An offset spatula is also great for frosting.

Ziplock bag with a hole in it also works great for getting the batter into the cups. It avoids drips and lets me fill them more evenly. Only fill 2/3 to 3/4 full to avoid overflow. Personally, I like using a knife for frosting because tubing it gives you way too much (IMO), but it is the only way to get that professionally mounded frosting look.

I'm no expert, but yes you can freeze them supposedly for at least a month, though i would only do it for a few days if I am having a party. Some say freeze without frosting and frost day of party. Others say frost them, put in freezer without top to set frosting, then put cover on so frosting doesn't stick to cover. You can take them out the night before party, but there is debate on whether they should be kept in the fridge as a food safety precaution.

I bake right in special cup. I can't recall if I spray the cup. I use the pans with 12 cups-the size between jumbo and small.

Re:icing-I think at the grocery store you can get a fancy smancy tool to shoot iceing onto the cupcake in a pretty way.

Youtube, etc has a zillion videos, but I don't recall which ones I saw.

1 - Can I make them how far ahead? Can I freeze them? If yes, how long before a party should I defrost them? Do I defrost them inside the refrigerator?

2 - When you prepare cupcakes and are thinking about using a special paper "cup" for a party, do you bake with the special one or with a regular one and then transfer to the special one? I know it is a silly question, but I REALLY have no idea...

3 - When I tried making them before, I always get those HUGE things... like an overflow.... How much should I fill the tray in order to get perfect size cupcakes? Also, what size pan do I need to a middle size cupcake - not the regular one, but slightly bigger than the mini cupcakes...

Is there a website with a "how to" video? I also want to learn HOW to put icing on cupcakes.... what is the best technique, etc.


As you can see, I really don't know anything about cupcakes, but I have a party soon and I need to learn the basics asap.
