Broccoli cheese soup, loaded with other vegetables (cauliflower, potatoes, carrots, onions, celery), served with crusty bread. The nod to the almost-vegan was to use spendy organic cheese and milk, because he won't eat eggs or dairy unless they're organic. As my brother put it, "it's like he can taste the cruelty".

I also made turkey paninis for those folks who just really need some meat in their meal.

I wanted to make a vegetable lasagne, but couldn't stomach spending so much on the required organic cheeses.

And now... everyone has gone home, my house and my kitchen are mine again, and I think I may eat nothing but cold cereal for the next three days!

Agree with everyone that you've done a lot of work. Could you just order in pizzas? Cheese and veggie for the vegetarians and pepperoni or sausage for the meat eaters?

I just made sweet potato & black bean enchiladas.

For vegans one dish had:
sauteed onions, green peppers, & garlic
black beans
roasted chilis
roasted sweet potatos (peeled)
corn tortillas
enchilada sauce
Cumin, Pepper, Coriander, pinch of Cayenne, Nutmeg, & Cinnamon

For veggies, I added jack cheese

For carnivores, you could add shredded chicken.

Topped with avocados for all, & sour cream for the veggies & carns.

could you do some type of greek food? falafel, hummus, tabbouleh, tziki sauce, some lamb or chicken, lots of pita, a big salad?

I have had a houseful of family for several days, and tonight is our last meal together. Several are vegetarians (one almost a vegan), several are anti-veg (that is, don't feel they've really eaten until they've had some meat).

So far, I've made:
Stir fry with tons of vegetables, and some chicken on the side.
Spaghetti with a really fantastic sauce, meatballs optional
Vegetarian chili
Make-your-own tacos-- big vat of ground seasoned beef, rice, beans, sauteed vegetables, etc.

Rice and beans (or lentils, or whatever) as a stand-alone won't fly with this crowd. Are there any other options of a single meal that I can tweak to please everyone as above?
