Homemade cinnamon rolls. And as a vegetarian, I agree that tofu scramble can be really good. I've done a brunch with both scrambled eggs and scrambled tofu, then a bar with small homemade tortillas, salsa, avocado, cheese, etc - make your own breakfast burrito kind of thing.

I think a nice steel-cut oatmeal with lots of fruits, sugar, milk, and cinnamon would be delicious. You could make it in the crock pot.

Home fries. Scrambled tofu (it can be really good, actually, and your vegetarians will appreciate the effort) - probably can make ahead and reheat. Poke around on epicurious for additional ideas.

baked apples? you core an apple and put nutmeg, cinammon inside and bake them in a crock pot. you should be able to google the recipe - that is variation on regular fruit salad

We are having Christmas brunch at our house, and we've got a mixed group of omnivores and vegetarians (of varying degrees). We are planning on making a do-ahead baked french toast recipe and sausage/bacon for most of the group, but we a couple people eat dairy, but do not eat eggs. I can only think of oatmeal, fruit and the like, and I feel like it should be more substantial and warm. Any ideas on what I should make? If I can make it ahead of time, that would be even better! Thanks in advance.
