It was actually amazing.
It ended up being: cooked rice, carnitas (which were slow cooked in salsa verde), black beans, onions, a can of green chilies, a jar of Trader Joes corn and red chili salsa, an egg, a cup of the southwestern butternut squash soup, and some queso blanco, and pepper jack cheese. I added cumin, red pepper, and chili powder.
It tasted a bit like the filling for chili rellenos, but was good on its own as well. Spicy, smoky, sweet.

Despite that victory, back to the recipes for tonight

I will admit to being a Mexican food snob (DH is a Mexican immigrant and his mom is an AMAZING cook), but this sounds super gross to me. Sorry OP. Do you have tortillas, white onion, and cilantro? Much better to do tacos.

i'm a follow the recipe exactly cook. no good at improvisation!
my meal plan for tonight, however, isn't going to work out because it turns out it takes more than a night to thaw a pot roast. so i'm scrambling a little bit. i have leftover cooked rice, beans, and pork from last night--but my husband grumbles about leftovers so I want to do something new. i also have about a cup of leftover homemade southwestern butternut squash soup, salsa, and plenty of cheese, oh and 1 egg. could i mix all of these together as some sort of casserole? or will the squash soup make it taste funny? i also have cauliflower, but would like to save that for tomorrow. i don't want a meal without any veggie--as carb-y as squash is, it's better than just meat, beans, and rice.

help!
