I think you mean the one I posted, and I am so glad your DD liked it!
Here it is:
CORN PUDDING
2 15 3/4oz cans cream style corn, NOT drained
1 box Jiffy Cornbread mix
2 eggs (you could use egg beaters)
2/3 C milk (use skim/no fat)
1/2 C cooking oil
1 dash garlic salt
Mix together and pour in to a greased 9X12 baking pan and bake at 350 for 45 minutes (my note: that is how the recipe reads, but it can easily take an hour).
My kids love it and it takes all of 3 minutes to throw together.
This year, we couldn't find Jiffy mix in our grocery store (?), so we used the cornbread mix from Costco (comes in a six-bag package, forget the brand). Each bag is double the size of Jiffy, so we doubled the whole recipe using that mix, and put it in two pans. It came out very well - a little different, but great.
I bet the Trader Joe's cornbread mix would work well too, but might require doubling the recipe as the Jiffy mix is 7 oz. (Doubling the recipe is a good idea anyway because it's a hit, and because it's good as leftovers.)
