I make scratch cakes all the time. It really doesn't take much more time, like 15 minutes, for measuring and mixing ingredients.

I'd rather bake a cake once a month for my family than buy a box of ho-hos or twinkies, you know? Healthier snack food, homemade, still a treat, exciting to eat after dinner... get it?

Scratch. I used to use mixes, but realized it really doesn't take much more time to make it from scratch - we are talking a few minutes to measure the ingredients.

I make them from scratch, it's really easy.
I use this recipe for chocolate cake - how much easier can you get and it's not full of 200 ingredients like the box stuff.
