I just did a trial run of these and they are pretty good and incredibly easy to make:

Figs with Walnuts and Gorgonzola

fresh figs (Black Mission or Brown Turkey), halved lengthwise
Gorgonzola dolce (or other mild gorgonzola)
walnut halves
balsamic vinegar
salt

After cutting figs in half, make a small depression in the middle of each with your finger. Place sliced-side up on a baking sheet. Sprinkle a couple drops of balsamic vinegar in each. Sprinkle with salt. Add a dollop of cheese and half a walnut to each. Bake for 5 minutes in a 350 degree oven until cheese melts.

Good luck finding figs though. I went to three stores this morning and couldn't find anymore. Whole Foods near me had some green ones.

You could also do dolmas, vegetarian samosas or spring rolls/egg rolls, veggie sushi rolls, chips and salsa, artichoke and spinach dip - this recipe is delicious:

be care ful with the cheese; most feta and parmesan are not vegetarian, the contain rennent which is taken from a slaughter calf or lambs stomach.

I like roasting halved fingerling or baby red potatoes until they're crisp, dolloping sour cream or cream fresh on top, sprinkle with chives

Go to an Indian grocery store and buy some frozen samosa's that you can bake in the toaster oven (Deep's spinach and cheese samosas are awesome). Do not forget to get some chutney's to go with the samosas when you are there.

definitely a nice crostini. I'm always a huge fan of spanikopita, and don't forget the easy spiced nuts and mixed olives.
