Subject: Question about veggie lasagna
If you google "veggie lasagna potatoes" you'll get some hits, so it has been done, but I've never had it.
You'll also get some hits for sweet potatoes in lasagna, which makes more sense nutritionally.

Also have never heard of potatoes in lasagna. Why would you want to add more starch/carbs to a pasta dish? I do spinach lasagna and just make regular lasagna, but blend spinach(and any other desired veggies) into the ricotta mixture. Very easy and always a big hit.

Vegetarian here and veggie lasagna pro, I've never used potatoes or eaten them in lasagna. There are a bunch of veg lasagna recipes on here in the archives if you want to try some other recipes.

Subject: Question about veggie lasagna
I just got this recipe from a friend. She says she made it up-doesn't really use a recipe, so she says to use 3 small potatoes. Does this sound correct? It seems like that would have an odd flavor/texture in a lasagna to me. But I am completely new to cooking vegetarian meals. Any input? Thanks!
