Love the fajita suggestion. We also make a ton of bean burritos with corn, onion and peppers (chili in the can or bell from the produce section, depending) and then smother them in enchilada sauce.

Same fajita stirfry principles apply to asian foods - just change the sauce a little bit. You can add some quickie peanut sauce (1C peanut butter, 1/2C brewed black tea, some garlic and spice, as you wish), or some spice or whatever you want. I used to fry tofu but it stops being a quick and easy dinner if it takes 45 minutes of prep.

I like pastas with peppers, onions, and tomato sauce. You can add some of the veggie crumbles if you feel like it, as well as things I do not care for, like mushrooms and squashes

Soup! It's so easy.

Most of my soup recipes are like this:

One onion, diced
Celery or bell pepper, diced (depends on which flavor is best)
garlic, minced

Saute those ingredients until translucent. Add a carton of vegetable broth (Trader Joe's hearty veg broth is best).

Add any of the following:
*diced and peeled sweet potatoes and/or butternut squash (you can get both prepped from TJ's) can also add carrots, apples or pumpkin
*1.5 - 2 C. split peas
*diced and peeled white potatoes (saute leeks instead of onions)

Salt
Pepper
Sage
Rosemary
a few dashes of hot pepper (doesn't make it spicy just enhances the flavor)

simmer until all the ingredients are soft, mash with a potato masher then blend with an immersion blender.

for protein, add some nutritional yeast

I usually serve with bread and salad.

I developed a meat aversion while pregnant... My staples:

Roasted veggies
Black bean and rice burritos with homemade guac
Edamame
Sauteed peppers and onions
Morningstar burgers
Homemade spanikopita
Lentils in the crockpot
Chickpea and fresh veggies tossed with italian dressing and pasta


None of these took more than 10-15 minutes of prep time.

my favorites:

bean chili in the crockpot (3 cans of beans, 1 can crushed tomatoes, onion/garlic, olive oil), serve with rice or biscuits

chinese stir-fry (saute tofu with 1 can of baby corn, 1 can of chinese mushrooms, 1 can of bamboo shoots, rice vinegar, soy sauce and sesame seeds), serve with rice

I could always use more ideas.

My favorite, which we have once a week at least is veggie fajitas. Simply saute veggies and morningstar chickn in Olive Oil, then assemble fajitas with cheese and sour cream. Sometimes we add avocado slices.

Morningstar chickn strips
Cheese
Sour cream
