Love the fajita suggestion. We also make a ton of bean burritos with corn, onion and peppers (chili in the can or bell from the produce section, depending) and then smother them in enchilada sauce.
Same fajita stirfry principles apply to asian foods - just change the sauce a little bit. You can add some quickie peanut sauce (1C peanut butter, 1/2C brewed black tea, some garlic and spice, as you wish), or some spice or whatever you want. I used to fry tofu but it stops being a quick and easy dinner if it takes 45 minutes of prep.
I like pastas with peppers, onions, and tomato sauce. You can add some of the veggie crumbles if you feel like it, as well as things I do not care for, like mushrooms and squashes
