They absolute key to good stuffing is a seasoning mix called "Bells Seasoning".

Use Pepperidge Farm Herb stuffing mix.

Saute diced onions and celery in butter. I use 1/4 c of each when I use half a bag, 1/2 c each for full bag.

Add cranberries.

Add stuffing and enough chicken broth to moisten.

Stuff in turkey...

I had a great version but it takes oysters and a lot of time and effort (and butter and bacon...)

I don't remember where I found this recipe, but last year I made a cornbread-sausage-cranberry-pecan stuffing that was sooooooo good. It was the only dish I had to make since we were going to a friend's house and they had the other dishes covered, so I went all out and made the cornbread from scratch, toasted the pecans, did something to the cranberries (can't remember what), bought realllly good fresh chicken sausage, etc. etc. It was unbelievable. I'm going to make a version of it this year but since I'm hosting this year I'm going to tone it down and use store-bought ingredients.

My MIL makes the BEST stuffing. My SIL and I watched her make it and tried to write down the "recipe" but it was most just sight work on her part. Here's what she did (this makes a HUGE batch)

1 bag each of each flavor of the dried Pepperidge Farm stuffing mixes (there's like cornbread, savory herb, a couple others- I think 5 total)

Pour all these in a MASSIVE bowl. Boil up a couple pieces of chicken- white or dark, your preference, then shred these and toss them in there. Cut up 1-2 each of onion, green bell pepper, and celery stalks. Sautee these just till soft, then add in. Add in 4-5 chopped boiled eggs, then wet it all down with chicken stock until it's VERY moist- almost more moist than you think it needs to be since it will bake and dry out. Season with plenty of salt and pepper, tasting as you go. Bake at 375 until done all the way through - we usually split it between a few pans so it doesn't take so long.

Stuffing is, in my opinion, the absolute best part of Thanksgiving. I could eat just that and be happy. BUT, I have yet to find a stuffing recipe that I absolutely love and am excited to repeat. I'm not looking for anything "fancy", i.e., no oysters, capers, raisins jut good and comforting. In the past I've made a bacon/biscuit, cornbread and sausage, white bread and sausage but none of them have been "the one". If you've got a recipe that you make year after year, please share!
