Agree. The BEST butternut squash soup I've made is made with a can of coconut milk. I use sliced ginger, carrots, onion, garlic, celery along with the roasted butternut squash, with a vegetable broth or chicken broth base, and add the coconut milk at the end. Then puree.

Try this recipe. I've used delicata and butternut before when making soup this way and both are very tasty.

anyone had success with using an alternative ingredient. DD is lactose intolerant and wanted to try to make a soup/bisque with butternut squash.
