I have been gluten free for a year and do not find this to be the case at all (unless if by Asian you mean Indian). A lot of the sauces at Chinese restaurants contain soy as a base and are thus off limits, and I have encountered very little understanding of questions about whether soy is in a sauce. Oyster sauce and black bean sauce are often off limits as well. Japanese restaurants are good for sushi, but any meats tend to be marinated in soy sauce. Fish sauce can sometimes have wheat in it (inexplicably) so Thai is a risk, and Thai can also have soy sauce...
If you are doing this for your child it may be OK, but the second ingredient in soy sauce is wheat so it is not like things with soy have just a trace of gluten.
I would love to stand corrected though and expand my own options, so please weigh in!
PS Mandu (Korean) has gluten free options and is delicious.
