OP again, don't use too much taco seasoning b/c the sauce is hot and salty enough. I used a heaping tsp total for 2 packets of potatoes. Enjoy

OP here. Just in case you were wondering, the potatoes came out REALLY good! I used 2 packets of shredded potatoes, some taco seasoning and a jar of rosa mexicano tomatillo sauce. Mixed and baked at 350 for 40 min. Very tasty, a bit spicy but yumm.

I'm doing a vegetarian brunch tomorrow...breakfast burritos is the theme. I'm making scrambled eggs with red and green peppers. I'll have fixings like cheese, guacamole on the side. I bought the packaged hashed potatoes which I'm thinking of baking in a casserole type of dish with a jar of tomatillo sauce. Any suggestions? I've not done this before but bought the plain potatoes instead of the southwestern flavor. Oh and the potatoes have to be vegan. Tia!
