You should check out Toki Underground on H Street. It is insanely good and apparently the chef is Japanese. Best ramen I ever had. I had the Toki Hakata classic.

Oooohh, all those recipes so great. Now, if you are insane and really want to go whole hog, check out the cookbook Momofuku by NY chef David Chang. It actually describes how to make ramen down to making your own noodles. Very involved and complicated but also very interesting.

One minute before it's done, whisk a raw egg into the pot. The egg will cook by the time the noodles are done, and it really enriches the flavor as well as contributing some protein. It tastes fantastic!

I wish I had a recipe to share! There was one ramen place I frequented in Tokyo - insanely good ramen with fried pork (tonkatsu) in a black seasame sauce. Unfortunately I don't know much more than that as to what they put in it! I would kill for a bowl right now.

This is my favorite recipe. I'll probably make it tonight. When I told my husband about it he thought I was so gross, but now he likes it.
Boil the noodles according to package instructions.
In another small pot, combine lots of ketchup, less soy sauce, and even less hot sauce (I use Texas Pete). Add a bit (les than half) of the beef seasoning packet and heat. Once warm, add chopped onions. Adjust ingredients to taste.
Drain water from noodles and add sauce. Yum!

I love it and so do my kids, but it's really not good for you, so we don't have it very often. When we do, I'll add chicken broth (or make broth from a leftover roast chicken carcass), and some frozen or fresh vegetables, so it's at least kind of healthy. The kids gobble it up.
