I used about 4-5 sweet potatoes (baked in the microwave) and mashed. I added a little more water and juice of 1 lime to thin it out.
All in all, pretty godd, but I think needs a sauce or something. Maybe if you were using sweet potato puree from a can it would be smoother.
Gonna try the lentil rice casserole tonight.
OP here, I use tablespoons for the spices. I like my garlic and cumin and you need a good dose of salt for that amount of beans. I could see wanting a sauce, but I like them crispy and often pick them up to eat.
