It's great that you're using coconut oil. It's a great plant-based source of healthy fat and lauric acid. Be careful of using it with canola oil, actually be careful of using canola oil period. It's a highly, highly refined (bleached) oil and is especially unhealthy when heated to high temperatures.

I cook with it all the time and have never had a problem. I'd never mix it with canola oil - yuck.

I use it anytime I'd use oil to cook. Much, much, much healthier than canola.

OP, just for further information ,this is a tub of Nutiva brand organic extra virgin cold pressed pure white unrefined, not deordorized or bleached. States on the tub 'ideal as a high heat (350 degrees) cooking oil. I know, a lot of info, but again, I've never used this before and apparently, many of you have. I actually received accidentally from Amazon with another food order.

Coconut oil is great- it has a great texture/consistency so can be used in place of butter in baking. I have only used the non-flavor kind. It is expensive but i feel really good about feeding it to my kids.

I use coconut oil a lot! You have two choices - unrefined, which tastes a bit coconutty, and refined/expeller pressed, which tastes like nothing at all. I'm picky about the brands I buy, and I like the coconut flavor so I buy unrefined/virgin.

I've pan-fried steak, made scrambled eggs, and anything else you need oil for, with coconut oil.
