I’ve been making a whole chicken once a week and the method is so so easy and delicious. I can’t remember where I saw it. But it’s a chicken soup inspired recipe.
I put a little oil on the bottom of a big pot. And put what ever vegetable I have on had. I put a layer of lettuce or cabbage on the bottom the the veg, then the chicken, then more veg, and top with more lettuce or cabbage. Cover and simmer on low to med low. The moisture from the veggies releases and you get the most delicious broth. The chicken just falls off the bone.
I’ve decided this will be the end of the week meal and just throw whatever is left over in the pot.

Currently simmering brodo to make a ragu later in the week. Made a batch of Moosewood's Mexican-style chickpea salad for my lunches. Planning a white bean and kale dish.

Last night was warm lentil salad, roasted salmon, white rice, and a frisee salad.

Tonight is meatless . . . so a broccoli rabe quiche with a big salad (mixed greens, cukes, tomatoes, carrots, chick peas, avocado, and garbanzos).

I have some frozen ground chicken to use up. Since I probably won't be coordinated enough to thaw it first, I will probably cook from frozen, add sauteed onions and then make burrito filling or add to a puttanesca type sauce.

Monday I must cook my chicken drumsticks because today is the Use By date. So then I will shred two for putting in bone broth. Also must eat a pint of strawberries Monday.

I have marscarpone cheese, grape tomatoes and burrata to use, so this is with those in mind (also if you have recipes to use these, please share):

Marinated cherry tomatoes with straciatella

Squid ink pasta in seafood cream sauce

I prepped all the herbs to make Green goodness dressing to go on baby romaine & butter lettuce salads — I also might use the remainder of the dressing to make the Dan Pelosi Green Goddess meatballs

thank you for starting this thread, OP. I have been so uninspired with cooking lately!

I haven’t prepped anything except having gone grocery shopping, and my planned meals for far are:

pesto salmon with cous cous and broccoli

turkey meatballs with pita and tzaziki and a tomato/onion salad

chopped italian salad

I boiled a lot of eggs yesterday- some for egg salad which I made today, some for the dogs. Steamed a cauliflower. Cleaned out the fridge. That's as far as i've gotten because it's very hot today.

Grilled some shrimp for salad tomorrow. Made a rotisserie chicken. Made a batch of hard boiled eggs. Have some homemade beef jerky in the oven now. DS requested an Italian pasta salad which I will make later. Always have fruit and veggies cut up and packaged for easy grabbing.

Our weekly prep tends to revolve around easy protein snacks for DS for before/in between activities.

I'm making:

* baked beans from scratch
* brown bread (recipe from Moosewood low fat faves, I have some buttermilk to use up and I want it with the baked beans)
* egg salad
*german potato salad

not sure what else yet
