Not 16:38, but I think that's what she meant. The pancake/waffle mix (I get it at Costco and forget the official name) has recipes on the box and suggestions for using as a flour replacement.

Not muffins but also try this high protein pancake that he could heat as a snack:
1 cup cottage cheese
1 cup oats, ground in blender
4 eggs
Splash vanilla
1 teaspoon baking powder
1 teaspoon cinnamon
They would also be good with nuts added. I like them with banana and maple syrup. (Could skip syrup and use maple butter or pumpkin butter or jam or whatever if you want a more handheld snack).

I make moderately high protein muffins buy adapting the cooks illustrated basic bakery muffin recipe. It calls for yogurt so I use Greek yogurt. It calls for 3 cups all purpose flour and I use 1 cup all purpose, 1 cup almond flour and 1 cup golden wheat flour. My kids don’t like nuts but I think you could also increase the protein by adding pecans and pumpkin seeds on top.
You could make similar adjustments with any pumpkin recipe. We really don’t like stuff with protein powder added so this is what we do.

Anyone adapt a muffin recipe to add protein powder? Or have a good protein muffin recipe? Looking for pumpkin in particular but will take any. DS would like this for a snack while he's in season.
