PP is correct that you can revive by submerging becuse they can take in water from the petals, but they also (and primarily) take in water from the stem. The challenge is that the cut stem very quicky floods with stick stuff to heal the wound, and that prevents water uptake in the stem. The "younger" the stem the more likely it will happen. When I cut from my hydrangea shrubs in the fall as they turn dark violet, they don't wilt and in fact will dry like a preserved flower once the water is gone because there is less safety flow at this time.
To keep the stem open you can cut it under hot water, or dip the cut in boiling water.
