Getting fired seems over the top unless they were drunk or engaging in some other inappropriate behavior. Maybe some sort of reprimand and clarified guidance would make sense, or removal from future trips.

I know our coaches cannot have a drink in front of the kids. They travel quite a bit (this is rowing, with overnight regattas and a spring break training trip). Not sure if that's athletics specific.

No. Any adult willing to take kids overnight should have a glass with dinner, let alone after hours and off duty.
But if you’re the teacher and you’re worried then err on the side of caution and don’t. If you can’t stop at one, then definitely don’t.

Only chaperones for trip for high schoolers to another state. Let’s say the drink is in the hotel bar.

When off-duty, I don't think you can criticize any adult over the age of 21 for drinking, unless there's a DUI, endangerment, etc.
