Gizzards at Giant are sold for human consumption, they're fine for cats too Chicken hearts are in tubs at the grocery in the same spot as the livers and gizzards usually. Definitely cook them, for the cat I just boil them, no seasoning. My cat loves them.

Pet stores sell frozen or freeze-dried raw organ meat for cats and dogs. The Big Bad Woof in Takoma DC has plenty. No need to cook.

Slice the gizzards before poaching them. Hearts too. Cat doesn't want big tough chunks.
Chop before serving.

Definitely cooked. No raw meat, too dangerous. My cats wouldn’t touch that, fyi. Maybe get one of those fancy feast gems mousse and plate it up nicely.
