Also - aren’t most admissions deadlines for this year either past or very soon (like tomorrow)? I ask because May often take more time than your kid thinks (e.g. in addition to portfolio and essays they need to create a video for some school’s specific to the school).

Went through this with my DC. The schools themselves are very helpful on this - most of them offer webinar style sessions where they go through expectations, examples, what they like to see because they know students dont' know how to do this. Some schools will even do one-one-one sessions with students, and check out the national portfolio days. In general, don't worry about doing architecture -type drawing. All the schools are going to ask for multiple drawing in perspective/still life because they want to make sure you can draw representationally from life, but other than that they want to see your creativity, and you can use multiple media.

I hope you are thinking about next year, but if this is for this year, I assume you are looking at like Pratt/SCAD - they will both give you individual feedback (although i don't know if they can this late.)
