I find breakfast for kids pretty easy (bagel and lox, english muffin with pb and jelly, sunny side up egg on left over rice) and we just do yogurt and fruit so don't focus there but need food in fridge for nights we both work late.

Big batch of kale and chorizo soup (cook with onion, carrot, celery and beans).

Chili (we eat beef but turkey fine if you don't want red meat).

Roast a full chicken for sandwiches and a dinner.

Roast huge tray of veg .. broccoli, cauliflower, carrots, onions, mushrooms. Add to two different meals.

Slow cooked red cabbage is great for winter and lasts all week.

Have a big batch of rice ready to go with chicken or chili.

Corn bread for with soups or for breakfast.

Seafood is the only thing we eat lots of and I really prefer not to cook ahead (except for a ginger coconut milk shrimp stew).

Once every 6 weeks or so I prep meatballs with grassfed beef, ground pork, or a mixture of those two meats, in a red sauce. These are awesome over whole wheat pasta, as a meatball sub, or even over steamed rice. Serve with a green salad. We freeze what we don't use within 4ish days for a quick meal down the road.

I’ve never done FPS but I have tried to plan ahead from time to time. I freeze pancakes, waffles and muffins. I have cooked ground beef in bulk and then I can easily season it for tacos or throw it in a jar of sauce for spaghetti. DH loves sloppy joes too but I make those rarely. I also buy rotisserie chicken and use it as a shortcut for multiple meals. If you prefer scratch cooking, you can easily roast a chicken. Until recently my son had nightly soccer practices so for years we just turned to quick meals. Big dinner salads, Mexican bowls, quesadillas, etc.

Baked oatmeal is a great breakfast, for kids or adults. It has plenty of protein, and lots of fiber.

I've had success with a fritatta or quiche, or a breakfast casserole with a sturdy bread (torn-up bagels, French bread), cooked crumbled sausage, diced apples, then soaked in an egg/milk batter and baked.

I get the most bang for my food-prep buck, though, by making a batch of something that I can eat for lunch all week. This week I'm going to make this cabbage soup, but add canellini beans and maybe some kind of grain, like farro.

I've also made grain bowls with brown rice or quinoa, roasted root vegetables, and chickpeas. It makes a giant batch that I can keep in the fridge all week. Each day, I heat a bowl up at work, add shredded kale and a citrus vinaigrette, and it makes a great lunch.

Op here: My basic baked oatmeal recipe has 3 eggs and a good amount of oil to make it heartier. And often I add chopped pecans or walnuts!

And yes my kids eat these kinds of foods, thankfully! I’m not an almond mom—we also have plenty of processed foods on hand and they get takeout with friends; this isn’t the only stuff they get, but I’m trying to keep us from grabbing too much processed foods and having enough fruits and vegetables.

The other ideas posted have been great! Chili, grain salad, etc. going on my FPS list!

Oatmeal has both protein and carbs, and you can increase either of both depending on what you add either in the oatmeal (fruit, nut butter, greek yogurt, eggs, nuts, seeds), or beside it (eggs, milk, protein smoothie).

Will they actually eat this stuff? This sounds like January healthy-eating best intentions, but only if your kids will eat baked oatmeal and zucchini muffins.

You know oatmeal is a carb? And it has 6 grams of protein. And if it's made with milk, it adds more protein.

A soup or chili.

I eat salad every day, so I love having a plate of cut up veggies for it (I do cucumbers, peppers, and onion in advance, I hate refrigerated tomatoes so do those when making the salad), and I make a homemade dressing each week (usually vinaigrette, but occasionally ranch or blue cheese).

I am not a vegetarian, but have been on a huge bean kick lately and almost every week I make a big pot of beans that I can eat with rice all week. This week was black eyed peas (obs, lol), but some favorites are mujaddara, and the Moosewood recipe for Skinny Tuesday's red beans. I have a great bake that I make with refried black beans, salsa, bisquick and cheese as well.

Consider also making a healthy soup and one crunchy grain based salad - both will hold in the fridge for a few days. Lots of good soup recipes on NYT Cooking or we love Once Upon a Chef soups and Marcella Hazen white bean. For grain salads, check out the Kitchn's Mediterranean-Style Chopped Salad with Oregano Vinaigrette (i leave out the lettuce) ([url]https://www.thekitchn.com/mediterranean-chopped-salad-22943245[url]) or google Jennifer Aniston Quinoa salad (which has nothing to actually do with Jennifer Aniston). This time of year a roasted squash salad with grains also is good and will hold a few days.

This is one of my 2026 resolutions— to take time on Sundays to prep some healthy things to make the weeks go easier. So I’m making a list called FPS.

It’s me and DH and 2 active teens who are generally good eaters—not too picky and will eat healthy stuff if we make it. Ideally I will get them to help!

I’m thinking of making a tray of baked oatmeal for breakfast. Any other healthy breakfast prep? I’ve had mixed reviews on my frittatas. Would love a good recipe. I’ve seen breakfast burritos for the freezer, maybe that will be next weekend.

I will make zucchini muffins for after school snacks and to throw in lunch bags when they pack.

I will wash and prep some fruit and veg (like cut peppers).

What kind of food prep do you do? Would love all suggestions (doesn’t have to be healthy 😁)
