I make this every New Year’s Day.

Soak a 16 oz bag of the dried black eyed peas overnight. The next morning, drain and place in crockpot with:

Half a chopped onion
1 stalk chopped celery
2-3 minced garlic cloves
1-2 smoked turkey wings, ham hocks, ham bone, whatever you have
3-4 slices chopped, cooked bacon
Glug or two of Worcestershire sauce
Cayenne pepper or hot sauce to taste
1/2 to 3/4 tsp dried thyme
1 Bay leaf
Salt, pepper to taste
5 - 5.5 cups water with 1 T chicken bouillon

Combine and cook on high for 5-7 hours or until peas are tender. Serve over rice!

I had some dried black eyed peas I didn't even remember buying, I cooked the with an Indian tomato sauce.

I make hoppin john from an old cooks illustrated “cover and bake”. I combine rice with black eyed peas, Tofurky cut into small bits, onion, etc and bake. Perfect.

Spicy blackeyed pea soup -- the recipe my family uses is kind of like this one, but with a couple of cans of Rotel added in. You can also add shredded kale to get the greens + beans aspect.
