I know you can sneak little kids into other hotels, but I assume every kid needs a wrist band or something to get fed etc . . . which means the resort needs to know they exist.
Our youngest is 4.

Will they let you put more people in the room than the description says?

Knowing the cost of an all-inclusive helps us loosen our purse strings. Better to spend $300/day on food and drinks for the family than to spend $1200 / night for an all-inclusive. Especially when the all-inclusive does not actually include bigger activities, so you still would spend more on excursions. etc.
