I still don't like fresh! That's a little much for me.
But chopped up and cooked well, either in a soup or duxelle, etc., they really have their place.

That is funny! Merry Christmas if you celebrate. I dislike canned now, but I am ok with fresh.

How do they make it? I really want to like eggplant, but can't make it right. On another subject, why are so many foodie YouTubers calling it eggplants? "Let's see how many ways you can make eggplants," as an example. There was one video, and it was said dozens and dozens of times. What am I missing? I thought eggplant was plural too, but I'm not a native speaker.

That is nice, I would not go for carrot soup, but I dislike soups, period.

So many things. I'm a really picky eater but am so much more open than I used to be. A few things I came to like:

-dim sum
-carrot soup
-black cod
-steamed broccoli

eggplant. I could never get excited about it until I lived in Taiwan and discovered so many delicious eggplant dishes. I haven't been able to recreate any of them, but I will fight for eggplant now.

Kimchi and Sushi. Hated it the first time I tried it. Then figured out how to make kimchi a part of a delicious morsel using banchan items. Same for sushi. The correct seasoning and accompaniment makes it delicious.

I wish I knew how to use chopsticks. I have tried and failed numerous times.

I mean like cuisines, dishes, meats, etc. I used to dislike hummus so much! I went to the Persian Gulf (for a while_ and saw everyone eating it, and I was, eh. Then I tried it there! It is not garlicky at all. I love it; it is my favorite dip now. It has some lemon in it; you do not feel garlic in it. Tahini is the star. I even make salad dressing with it. I bought it here again, and then realized it is made very differently here, more like garlic dip. Now, I have to find a good Middle Eastern store or learn how to make it that way.
