I’m making a roast (chuck roast) on Christmas. I plan to do my weekly grocery trip on Monday the 22nd. I want to avoid freezing the roast, but I also have plans to bake all day on the 23rd, and we host on the 24th. If I buy it on Monday, keep it in the coldest part of my fridge, will it start to turn by Thursday morning? Should I run out late on the 23rd instead? Instacart isn’t an option because I need one that’s just the right size.
