PSA that Trader Joe’s usually has them for cheap. I like them roasted with some creek yogurt and salt.

They are super good brushed with coconut oil, sprinkled with salt and roasted. Then eat that with avocado yummmm

I just wrap them in foil and roast them for about 45 minutes. Love them.

I just chop them up, toss with olive oil, salt, and pepper, then roast at about 400-425 until they get crispy. Love purple sweet potatoes.
