If anyone wants to try a corn pudding recipe without cornbread mix, this one is delicious and easy:

I made this last night:

Melt a stick of butter, let it cool.
Add melted butter to two eggs, 8 oz. sour cream, whisk to combine.
Drain a can of sweet corn, dump in bowl.
Open a can of creamed corn, dump in bowl.
Dump in box of Jiffy corn bread mix, fold everything together.
Add to buttered 2-qt casserole dish, bake at 350 for about 30 mins.

Happy Thanksgiving!

Does it fall apart without the eggs?

No.

I have eaten this since I was a child and never heard of adding eggs until I was an adult.

Saw it listed on the crazy stories thread and it sounds good and I want to add it to my list. Went out this morning and got the corn and jiffy. Seems like people differ on how much sour cream and eggs to use. Both had one stick of butter. One had a can of regular corn and one had no regular corn. 1 egg, 2 eggs, 3 eggs??
