This is goooood, and very very easy even on the front end. (I just use a store-bought sofrito.) On the back end, all you have to do is shred the chicken, which truly takes 30 seconds to 1 min.

Hahaha I didn’t realize I wrote cockpot. That’s what I get for posting late. I’m fine with pulling out accompaniments. I just keep finding recipes that are like “for the last 30 minutes remove the sauce to a pan and simmer to reduce and add xyz”. Hoping to avoid that kind of thing

My favorite slow cooker recipe is Chicken Tikka Masala from The Kitchen- no need to add anything except maybe a couple garnishes if desired and serve with rice.

Agree with the pp one of the easiest options is pulled chicken or pork if you have rolls and premade coleslaw.
I also like to do beef and vegetable stew and just pull out premade (or made earlier by me) cornbread.

Do you mean just pull off the lid and eat, without pulling out accompaniments? If so that’s hard.
If you are willing to bring out a few items to accompany the crock pot food, we like turkey and bean chili and chicken verde chili (put out bag of shredded cheese, sour cream and tortilla chips or fritos with these); pulled bbq chicken (just need to shred the meat, put out rolls, and open a bag of coleslaw or salad with it); lentil soup (put out crackers or bread); honey sesame (soy sauce) shredded chicken (shred the chicken and microwave a bag of TJ rice and a bag of TJ broccoli to accompany).
