I occasionally work until 7 (or later). When I do, I reach out to my DH so he knows to take care of dinner for the kids.

No it's not late for me it's my usual schedule.
Late is subjective.
However I think if you're going to be beyond your scheduled time home it's courteous to give your spouse a heads up

When kids were young, yes.

Now, with a 16 year old at home, not really. I will ask if he's headed home soon or if he'll be home for dinner if I am making something special or at all laborious, but other than that, no. I work full time (often from home), FWIW.

I strictly leave at 5 every day so working until 7pm would be very late for me.

Only if your spouse usually comes home at 5. It depends on what normal is. If he works until 6:30 daily then no 7 is not late but if he is home by 5 then yes 7 is late

It comes down to what is the person's regular schedule. For me staying until seven is working late. But then I start work at 8 AM. There's no way I'm staying until seven. I have another coworker who schedules coming to work to avoid rush-hour traffic and she gets into the office around 10 AM. She regularly works until seven.

Yes . That’s late. Yes, I expect my spouse to advise if they’re working late.

Depends on their usual schedule. She usually leaves between 5:30 and 6, so yes. But if she usually left between 6:15 and 6:45, they 7 wouldn't be late.

I consider it late, but it depends on whether it's normal for them. Sounds like it is, since you found it worthy of a call.

I mean, sounds like it's unusually late for them.

Or normal? Would you expect to receive notice from your spouse if they were staying at work until 7pm?
