Because cooking food and putting it in jars is literally a primary form of food preservation? It is designed to turn fresh fruit into something that can be eaten year-round.

After a day in the fridge they go into the freezer. So no worries there.

I’m Gen X and have survived lo these many years eating almost anything that’s been left out (I have ADHD, so unfortunately not an uncommon occurrence) without ill effects. Call it survivorship bias, but I’m still kicking. The only things I don’t mess with are dairy or poultry.

Add some brandy or even vodka to each jar and let them sit in the fridge for a few days and you definitely will have nothing to worry about then.

I hate these, but am stuck in one and hope the DCUM hive can make up my mind. I made homemade applesauce (7 quarts), put it into jars at 8 pm, and it was hot so I left the closed jars on the counter to cool, then forgot about them until 4 am when I woke up to the realization and put them in the fridge. So 8 pm to 4 am. Do I need to toss and start over?
