Definitely call the hotel, always.
They have to do what local regulations require in terms of fire and life safety, even if it is a large room. Also, the website isn’t always up to date.

Problem solved.
I did call the hotel directly and they stated I can go ahead and book online for 2, then call them and add the kids. They stated they can accommodate 2 rollaway beds in the room even though the Bonvoy site specifically stated "no rollaway beds permitted". I booked online for 2 then called to add the kids. They just sent an email confirmation showing 4 guests.
Lesson learned for next time.

Yes, I would book it. Tell your teens to go walk the grounds while you check in so it's not obvious...but after you are checked-in, nobody will say Boo to you.
Pool use just requires a key card to get into the pool.

Call and ask. There probably is no bed in the sofa or other place for the kids to sleep. That’s why it “sleeps two.”

Do not book for 2 and show up with 4. They may refuse to register you. Plus things like spa and pool use are tied to registered guests.
Call the hotel.

We are a family of 4 with 2 teens trying to book a hotel for our next vacation.
We found a great deal on a St. Regis property with our Bonvoy points.
We usually stay in large one bedroom suites and it has worked really well so far.
I was surprised to see that they state a max occupancy of 2 people when the suite is huge: 1200 sq ft , 2 bathrooms, a separate living room and dining area (with a table that clearly has 4 chairs) ...
Would you go ahead and book it for 2 guests anyway and show up with the kids?
The suite is definitely big enough for the 4 of us and the cost of getting 2 separate rooms would be prohibitive.
I am sure if I call Bonvoy and ask, they're just going to tell me that the max occupancy is 2 because that's all they see on the website.
