So if a student was confirmed to be sick and missed class on Thursday and Friday of last week, they could turn those assignments in this week, theoretically with a deadline date of Tuesday night.
What we did in my class to avoid the difficulty with students being able to make corrections or reassess on poorly done work was we didn't make any assignments reassessable over the last 2 weeks. You had one chance to submit and could not make corrections on them.

Students then have three days to make up the missing work before the lockout.
Except kids would be in school until July 4th.
