Yes. Pears, caramalied shallots, walnuts, pecorino, and a flavorful viniagerette.

Sounds great and as a guest I wouldn’t complain but if you are looking for opinions, chives sound bad in that salad to me. Carmel used shallots sound better if the want more sweet or shaved radishes if you want a contrast.

Sounds good but I'd replace the apple with something more in line with the italian main course. Roasted butternut squash, or even pear.

Do you really want a critique? I’d eat whatever you serve and be grateful, but I’d be wary of a spicy dish for people coming over for the first time. And sun-dried tomatoes are unpopular with a lot of foodies.
